This week we bring you the bean soup recipe, as it is made by the locals.

- 500 gr of beans
- 1 teacup of olive oil
- 1 carrot sliced in round pieces
- 1 big dry onion
- 1 chili pepper (all of it)
- 1.5 L of water
We wash the beans with plenty of water and put them in cold water for 2-4 hours depending on their variety in order to soak. We add water in the casserole and let them cook until they are peeled off while adding cold water. Halfway though we drain the beans and throw the water away. We put the beans on the fire again and add one liter of water, oil, salt, pepper, carrot, the whole chili pepper and the grated onion. We let them boil for an hour or until the bean soup becomes thick.
